I was thinking of skinning the project for getUiKit.com -> how would one go about doing that?

You;d need to replace the DataTables stylesheet with something suitable. You might want to take a look at the existing stylesheets, particularly the Bootstrap and Foundation stylesheets to see how they operate. Styling manual.
