How to use server side processing on demand?

Hi!

I'd like to use server side processing only when count of rows in my table exceeds amount showed on one page. I did not notice such feature when going over the docs. Is it possible?

Edit. In my situation I load table data always from server, but I'd like not access server in situation when all corresponding data is already got from server on init.
