Dynamic columns generated?

Hi,
I am not finding the right documentation on this - but I would like to know how to generate datatables dynamically, where I do not know what the columns are going to be upfront? Most of the examples I am seeing are already defining what the column names are...I would really appreciate some pointers here....some questions in the past refer to pre version 1.10.
