I've been trying to adapt the examples of showing and hiding rows (https://www.datatables.net/blog/2011-06-19) to use Font Awesome instead of the images, but nothing I try seems to work.

Perhaps you can post the code that you've tried so far. It should just be a case of using the FontAwesome icons in place of the images from the show / hide example's CSS.
