Custom Table Header

I'm not seeing any way to replace the default table header with a custom one. I can see how to replace what's there with my custom header with jQuery, but it might make a nice enhancement to have a custom header defined via sDom with the header as a separate component within the sDom (and unless an alternative is provided, then default header appears).

Hope this makes sense.
