Just trying out V2, and very much want to invoke the 'old' shortcode extension [datatables_columnfilterwidgets=true datatables_columnfilterwidgets_exclude_columns=2,3,4] with the the elementor block insert method. How is this done without re-using the old shortcodes?

V2 of DataTables? It is very much still in development (it isn't actually even merged with the latest changes that will be released in 1.13.0 shortly!). We don't provide a build of DataTables 2 at this time, so you might have built it yourself? Or are you referring to some other software that is using DataTables? We don't provide a WordPress plug-in (which I assume you are using since you mention shortcodes). You might need to ask the author of the plug-in you are using.
