Column width getting adjust by cell contents

I have my table working, and I want to get the text in my cells to end in an ellipsis if they are too long. However, I am finding that my column widths are just expanding as the cell contents get longer. This pushes any remaining cells to the right to slide down further as well.

Does anyone have any ideas why this is happening and how to resolve it?

I guess I didn't clarify, but I am setting the column widths via sWidth, but that appears to get ignored and the width grows to fit the contents.
